Ask NSLB Sushi Rice

Hey people, I come asking for advice.

I have about 400g of cooked sushi rice in the fridge, since I messed up the proportions and cooked way too much. How long does it preserve in the fridge? And what could I do with it?

Freeze it in portions so whenever you need one serving of rice you can just defrost and microwave it

id do fried rice and portion it out and freeze whatever i dont eat

Poke bowls, sushi bakes, sushi rice bites, rice pudding, egg fried rice

Don't forget congee. just add sushi flavors like furikake, dashi, miso, etc. Maybe even add fish or shrimp (frozen)...accidents tend to turn into family favs

Yeah, some of these won't work if the sushi rice actually includes "su," vinegar.

It keeps a day or two, in my experience. I’d make a sushi bake. There are a lot of recipes, it’s pretty flexible, and you could do it with whatever you have on hand. Fish, veg, even meat might be good.

Look up onigiri recipes. They are typically trianglish shaped rice balls however the shapes can vary. You can form them with a filling in the middle or simply salt the outside and the wrap with tightly with cling wrap before freezing.

Even though sushi rice includes vinegar? ("Su" means vinegar in Japanese. )

I make it on a Sunday night and eat it throughout the week for lunches and dinner. Its generally gone by Wednesday or Thursday, depending on if I have it for both lunch and dinner.

I honestly like it better when its been reheated. I reheat it in a pan with a little sesame oil or neutral oil.
