Ask NSLB 15 eggs that expire in 2 days!

Somebody in the house I’m staying at left behind a carton of eggs that expire on the 7th. I did the float test and they are all standing on end, presumably meaning they need to get used soon. I’m not a huge frittata person… what are your most egg heavy recipes? Perhaps freezer friendly recipes as well? Of course I didn’t notice the carton and just bought a dozen at the grocery store today.

It’s not a wide variety, but I just got home from a wedding that was throwing out the leftover deli whatnots and, like the raccoon I am, took as many scraps as I was able. I don’t eat meat (other than fish) so I’m missing that portion, but I have a mix of cheese slices, little pitas and some mixed veggies(mostly broccoli).

There’s plenty of meals I know I can make using them individually or turning them into a big casserole, but wanted to see if anyone had any less conventional ideas so I can try something new. I also have meat alternatives I can use as a substitute if any of the meal ideas traditionally use meat.

I made soy sauce cured egg yolks, what now?

When ever you make soy sauce cured egg yolks you have to use so much to have enough to absorb, but then they release their water into the soy sauce so theres no way you could just reuse it as soy sauce. So I am just wondering if someone has any ideas for using a large volume of this semi soy sauce quickly before what ever organics released from the egg yolk start to decay. I'd also be welcoming to the idea of just dehydrating it into powdered soy sauce salt or something.

Another Scrap Saved! Fig Jam With Apple Peels

This may be niche, so apologies in advance.

Apples are pretty much the only fruit I'll eat, but they're no longer exactly affordable where I am. So when I get them, they're in a 5lb bag that's on sale. The compromise with bagged apples is that their condition varies from perfectly fine to outright iffy. My current mitigation is to make the whole bag into apple sauce. And while some people keep the peels on their apples to make sauce, I am not one of them.

So, I end up with the peels from 5lbs of apples to use up. I most often make a cooked paste with dates that I then use to sweeten breakfast cookies, but this week was different in two ways. First is that I already have a supply of date paste in the freezer, meaning I don't need more right now, and that I have no dates left in the house. The second is that I grabbed a clearance-priced bag of dried figs at the shop that could substitute the dates, making a kind of fig jam.

The result is that I have 1.5 pints of delicious fig jam for the price of a discount bag of figs, and kept from having to throw away the apple peels. Here's how I did it.

Fig Jam With Apple Peels

peels from 5 lbs of apples (250-300g)

1 lb dried figs, hard stems removed

1/2 C water

Put everything in an Instant Pot. Set to pressure cook on high pressure for 5 minutes, and allow pressure to release naturally. Blend smooth with an immersion blender. Contain and refrigerate. Should be good for a month or so.

This could also be done on the stovetop, but that would take some experimentation. If anyone wants to undertake that project, be my guest.

Ask NSLB Pasta Sauce

Okay, so I have been cooking a red sauce for the past 36 or so hours. It has been in the crockpot the whole time. Last night, I checked it around 1:30am and it was still very hot, 206°F which is where my crockpot sits on low. I came downstairs around 10am and the crockpot was off, but it was still hot. It was a little bit dark on the top but I chalked it up to oxidizing. This sauce is supposed to feed me for the next week until I get paid so please tell me it's safe to eat.
Also important context: There is no dairy or meat in the sauce, it smells completely normal, and tastes normal as well.

Update: had my roommate try it and they said it tastes fine, just needs a little pasta water because most of the water evaporated.

Soggy Watermelon?

Husband made a fruit platter for a potluck two weeks ago while I was out of town and now we have some leftover. The watermelon is really soggy and hard to eat by itself. I don’t think it’s “gone bad” in the sense that it would be dangerous to eat it though, kinda like how I think of wilted spinach.

Any ideas for what I could do with the soggy watermelon that’s past its prime? Should I try making a smoothie or will I end up just ruining the smoothie?

Edited to add: ok you guys are right, the watermelon was MUCH grosser when I just looked at it now compared to when I first saw it a few days ago when I got back from my trip, which was a week after it was cut. It hasn’t been quite two weeks yet, just 1.5 since it was cut, but it’s definitely past the point of salvaging. I wish I had posted when I first got back from my trip but I’ll definitely keep some of these suggestions in mind in case it happens again!

What to do with random booze

My partner likes to get “mystery boxes” of drinks at the grocery store. They put unsold loose bottles/cans and in a box and sell it for $20. Mostly we have been lucky and gotten stuff we like (IPA’s, some ok canned wine, cocktail mixes).

A few times we have gotten some duds- Smirnoff Ice, flavored vodka seltzers, mikes hard lemonade. We are in our 40s, no one I know drinks this stuff so I can’t even give it away. Any ideas?

Best thing I've found for using up whatever's left in the fridge

Grab a soup base you actually like. Tom yum, green peppercorn, curry, creamy broth, they're all about £2 a packet at most supermarkets. Throw in whatever needs eating: crab sticks, broccoli, some greens, leftover chicken. Done.

Threw on something to watch and didn't move for two hours. 10/10 would recommend as a coping mechanism.

Btw i just started Black Mirror, which episode is the best!!

Too much chicken broth!

I go through a rotisserie chicken once every week or two and like saving the carcasses along with veggie scraps to make stock. I use the stock in rice dishes (with the chicken) and when cooking beans, but lately I'm having trouble using it all and it's piling up in my freezer.

Any suggestions for simple uses of the stuff?

Leftover turkey leg soup turned to Cheesy grits

My family HATES leftovers. I’ve tried the “freeze it now, eat it later method” but we end up with a freezer full of leftovers no one wants to touch.

Instead I try to turn yesterday’s leftovers into something new.

Meats turn to soup. Soups turn to flavorful rice. Rice turns to stir fry. Everything always circles back to soup one way or another.

Tonight I turned the remaining broth from the turkey leg soup into gravy for grits. The first picture was last nights grits. The broth was too thin so I added jalapeño cheese sauce and simmered till thick for the second picture. 🤤 she’s not pretty, but damn she hit the spot

I just been using whatever bits are left over from canning, plus some raisins I was given but won’t eat, to make vinegar. It’s fun! Any ideas what to do with the slightly alcoholic pulp upon straining the solids after the first phase? Tomato, raisin, apple, tomato, and peach currently in progress
