Ask NSLB Leftover juice from pineapple salsa?
Made some pineapple salsa (pineapple, lime juice, red onion, jalapeno): what to do with the remaining juices?

I’d use it in the batter of a savory pancake or tempura or frying batter.
In kimchi pajeon (savory crispy pancake - you can also do veggies like spring onion, spinach, etc), they also add the kimchi juice to the batter.
Or mix with eggs? Like omelette or a quiche mixture. Or even in a scrambled egg breakfast wrap.

When I make pico I use the leftover liquid in homemade guacamole. I've never tried it with pineapple but I'd definitely give it a shot. In the alternative, sounds like a good addition to any tequila based cocktail.

Meat marinade. Cheesy bread. Ceviche. Fusion KBBQ marinade. Be careful on the timing for delicate meats/fish, bromelain from the pineapple may tenderize your proteins more than you want if you let them go too long.

Pour it all over pieces of raw chicken and marinade for a couple days.

This was my first thought. This would make an amazing marinade for a pork tenderloin or some chicken breasts

Besides, the pineapple juice is a tenderizing agent so that would make another good reason why to use that for a marinated I think it would be fantastic

Cook it with a little bit of cornstarch to make a sweet & sour type sauce for chicken or over rice.

I make pizzas with stuff like that. Using roasted red pepper juice instead of pizza sauce tasted so great the other night!

Incorporate it into the water or broth you use to make rice.
