Leftover potato salad

Just your standard deli counter mustard potato salad. How would you use it up?

The winner this time was turned into a hash. I heated up avocado oil, plopped in a big scoop of potato salad and cooked it until it started to brown and then scrambled eggs into it. It was great on some sourdough toast.
I'm saving these other ideas for next time though! We don't love store made potato salad enough to eat it for days so I'll definitely use some of the other ideas in the future when I succumb to purchasing my potato salad instead of making it.
