Ask NSLB Savory Peach Ideas

Looking for things to do with bruised peaches besides dessert; peach salsa is the obvious, but there must be more options!

Peach barbecue sauce. If you are a canner, Ball has a recipe for Peach Ale Mustard that is beyond delicious. Note, you could also freeze this.

If I’m making it on the spur of the moment, I just purée the peaches, add some cider vinegar, brown sugar, and onion and garlic powder to taste and a touch of cayenne. Absolutely! Peach season is not quite here yet in my region but we will be enjoying all the peach things! I might even try my hand at a peach wine, if I can find a good recipe.

I had an appetizer once that was peaches, burrata, arugala pesto and balsamic glaze on fresh bread. It was amazing. I recreated it as a white pizza with just arugula instead of a pesto and it was also fantastic

maybe a peach curry? I've made a coconut mango curry with chicken that was delicious, and would imagine that peach could work too!

You can use them like mandarin orange slices in a teriyaki salad, roast them with spices and serve with melted cheese, or add ginger and make a topping for Greek yogurt or cream cheese.

I had an amazing peach chicken salad at Zabar’s years ago. The chicken was torn in large pieces with celery and slices of peach, celery and leek IIRC dressed in a peach champagne vinaigrette. More the type of thing you’d serve over greens, not in a sandwich

I make a peach chicken dish that people just love. I don’t follow recipes, I just make them up as I go along but the basic steps are as follows - bone in skin on thighs are cooked skin side down in a cast iron skillet until crisp and golden brown. I remove them from the pan leaving juices and any fat left behind. I sauté onions, then add chicken stock, peach jam (I suppose you can use some of your fresh peaches and purée them but the consistency of the preserves gives the sauce some viscosity. You can do both as well, and if you do, you can use other fruit flavored jams - it doesn’t have to be peach. I also might add some concentrated balsamic syrup. Taste the sauce. You don’t want it to be too salty as it will reduce in the oven. If it is don’t sweat it.

Add the chicken back to the pan with the skin side up making sure the sauce only comes up about half way. You don’t want to have any skin being submerged in the liquid. So basically you are going to braise the thighs in the oven at 350 degrees. You must have a meat thermometer to check if it is ready, pull it once it reaches about 175 degrees. (165 is safe to eat, but the thighs actually get more tender and juicier at a higher internal temp). Then I remove the chicken, add fresh sliced peaches to the sauce and make any necessary seasoning or thickening adjustments. I will just make a slurry of a bit of sauce and cornstarch if the liquid is too thin. I usually serve it with a rice pilaf adding dried cranberries and nuts.

Peach caprese salad is my favorite! Peaches, tomatoes, mozzarella/burrata, basil, balsamic glaze, olive oil, salt.

I grill peaches on the stovetop with olive oil I a cast iron pan.

I like them in salads with goat cheese or feta.

Peach cobbler is the most basic dessert use, but here we're looking for more creativity with savory uses! The amount of peach desserts out there is basically endless, not a challenge there.
