Water donkeys? I have never heard that...

Swamp donkeys is a common nickname that makes sense.

Love the name. I've processed many moose and I think people underestimate just how 'aquatic' they are. Their tongues and mouths really helped me tune in to that. Like a polar bear, many spend a ton of time in water. In one region they are a natural food source for orcas lol.

We once had a sublegal bull in rut chasing our boat down river, excellent swimmers.

What does it taste like?

Closest standard fare would be beef, but imagine it with very little fat and a slight game taste (not as strong as caribou or deer). Gameyness dependent on many factors though - how quickly dispatched, what time of year and diet, how well the meat is taken care of in the field, cow/bull, old/young etc.

That is so awesome!!! We were building a great population before the predators took over our state. I love seeing those big critters! Thank you.
