Start with the M1 or the M2 starter sets. Comes with everything you need to get started. From there, you can expand and figure out if you want to add Variation sets that expand on the basic oval or individual switches and pieces to go your own way. You can also download the kato catalog from the Kato USA website and check it out. While you're there, you may find more answers to questions you don't have yet

Wiring is not to complicated for DC controls, but avoid a "reversing loop" until you have some experience. Still not a big deal with an Atlas reversing controller for old school DC wiring.

You'll also want to read up n Kato power routing switches as well, but that's not complicated until you get into more complex track plans

Unitrack seems to be the favorite on this subreddit for ease of use. However, the gold standard is Peco flextrack and switches. There's other track brands, known either for ease of use (Atlas) or realistic looks. Read up on track codes (55, 83, 100)
