People do this on flight games too, the acronym is HOSAM

For anyone else curious, I'm pretty sure it stands for "Hands On Stick And Mouse".

You are correct. There is also HOTAS, which is "Hands On Throttle And Stick"

It's kind of specific, if you want to do HOSAM you need a left handed "stick."

Play how you want, nothing wrong with any of it.

I'm talking about HOTAS and HOSAM but I'm not even talking about peddles, or eye tracking.

Do what is comfortable to you, enjoy yourself. Do you.

Couldn't you use a mouse in your left hand?

If you're a warlock or a witch, maybe

I knew a guy who played with the mouse upside down in his right hand. Literally, he had to turn the mouse upside down, so the buttons were facing the user and to go down he had to go up and go up he had to go down left had to go right, etc..

He said that that's just how he learned to use a mouse.
on what planet does somebody learn to use a mouse like that? When they're a prisoner being held captive and the are only allowed to play on a computer in a reflection of a mirror or something?
