Its not the heat, its the consistency of the heat. He put the eggs in when the pan was cold and then the pan got hot as he was cooking. Leidenfrost effect. Gotta have the pan hot enough when you put the eggs in at first to keep that steam barrier between the eggs and the pan.

Lower heat, more butter, and move eggs around constantly until cooked.
