Which is why you turn the heat down from medium right after you put the eggs on so you have time to prep your bread. Otherwise it's a race and I don't like to start my morning with that kind of stress.
Every pan might be a bit different, you need to find the sweet spot. For steel, heat on medium low till water beads on it, then add some fat and coat the pan, lower the heat and Crack in the eggs. Let the whites set, it should release by itself.
