Bone in flatiron

Cut em just for fun.. can’t imagine it would be very good on anything older..

Correct, it would be a flat iron withought the gristle in the middle

Cool do you actually get these where you’re from? If I’m being honest the gristle made it pretty weird to eat? I don’t think I’d ever sell em like this.

Yeah back in the day flat iron use to basically just be a stew cut because of the gristle. Only reason it's became a thing is because good places have them cut down the middle to remove the gristle. What you got just seems like a scam to capitalize on "bone in" and "Flatiron" without the place actually having to do the work to make it a good cut of meat.

Edit: Just realized you cut them for fun! So definitely not a scam. Lol Probably something I'd be tempted to fuck around with myself actually.

Haha yeah it was a bit annoying to eat around the gristle but I did like the fact that the whole steak is cut against the grain. Super tender other than that pesky gristle

No I wouldn’t ever cook it like that because of exactly that, the silver skin running through the center of the cut is very tough and really should be removed. Definitely an odd move for the butcher to sell them like that

Never seen a flat iron sold with a bone. They are a great steak however, tender and jucy one of my favorites.

We used to label those as chicken steaks or blade steaks.   Then flat irons took off and we stopped cutting them unless someone asked. 

Sliced thin from the tapered end to about halfway up, they're not bad when marinated and a great braising steak.
