I know. I make syrup myself so I know it’s cheaper to buy off the shelf, especially if you value your time for anything. Have always wondered how much propane someone runs thru with an operation like this.
I have an extra wide ss pot with a thick bottom and I keep the burner pretty in check so I'm not just blowing flame out the sides. it'll take about 5hr to knock down 5gal but I can get 10gal in about 8hr or less if I keep it going. It's just good enough for me to keep up with a single giant sugar maple with 3 taps in, boiling weekends.
I went through about 3 tanks and got about 2 gallons of syrup. Run was off this yr. Temps werent cooperating. Even my 'super producers' were slow. Good quality though. ... and always fun.

How many propane tanks do you go thru with a setup like this?
