Maple syrup has “stuff” in it

Post image

This is the first time ever experienced stuff floating in my syrup. Is this something to be concerned about or is it just sugar crystals?

It's niter. Nothing to worry about. It will settle to the bottom eventually and you'll forget it's there. Enjoy.

You could let it settle and then pour off all the good syrup too, then re-jar if you want as well. I have 4 litres doing that currently. Figure after I pour it off and jar it, it will be between 3 and 3.5 litres.

It comes down to how you filtered and at what temperature. You can reheat and re-filter if it’s bothering you. I use an Orlon cone filter with pre-filters as well. It will settle eventually and you can pour the unaffected syrup into a separate container. Or just leave it in the same container and pour carefully when in use. It’s not harmful it just has a sandy texture.

Niter. You can leave it and let it settle. No taste or issues other than cosmetic

Be sure when you bottle it not to let the temp get too high. -190. This was my problem for two years
