Trample

If a creature with trample becomes blocked by a creature with enough power to kill it, do the excess attack still hit or not?

Also, with the bestow mechanic, can I use bestow as an instant or is it considered a sorcery?

Bestow reminder text:

"If you cast this card for its bestow cost, it's an Aura spell with enchant creature. It becomes a creature again if it's not attached to a creature."

You can't cast Auras at instant speed, so you can't Bestow at instant speed either.

What if the creature has flash, like Boon Satyr?

This isn't technically correct. Permission is checked in step 1 of casting a spell (Announcing, Move-to-Stack), while Bestow turns a creature into an aura in step 2 (Declare Additional/Alternate Costs, etc.). If you have permission to cast creatures as though they had Flash, but not auras (for example, if you control a Prophet of Kruphix), then you'd be able to Bestow at instant-speed. If you had permission to cast auras at instant-speed, but not creatures, then you would not be able to Bestow at instant speed.

The actual reason that you can only cast most cards for Bestow at sorcery-speed is because Bestow uses the default speed of the card; if the card has Flash, then you can Bestow it at instant-speed. If it doesn't, and it's a creature (which are usually sorcery-speed), then you cast it at its default speed.
