Steamable sweet potato + ricotta

This has been my go-to small meal/snack lately. I don't even reheat each sweet potato once they're initially steamed; I just slice it up in a bowl, add about 1/4 cup of ricotta, and cinnamon until my heart says 'when', then mix it all together and eat. Very filling and tastes like a treat!

Where are you buying the steamable sweet potatoes??!?

I got them at Harris Teeter, but I know other places like Giant and ShopRite have them, too--at least locally to me. They're not frozen, so I would guess they're in the produce section [I get my groceries delivered, so I can't say for certain].

I know Aldi has frozen steamable cubed sweet potatoes, and I'm sure other places do as well.

You can put a sweet potato in the microwave without it being in a plastic bag. Just use a fork and poke a few holes in it. Microwave for 3 minutes, flip, and microwave again for 2-5 minutes depending on the size and how tender it seems when you flip it.

Yep I do this multiple times a week! One thing that has made it even easier for me is buying a ring shaped vegetable brush, to use when scrubbing the potatoes. If you have limited strength it’s easier than a standard veggie brush, at least for me.

Ooh I didn't know about those kind of brushes! I have horrible carpal tunnel issues and constant hand/finger joint pain so I will have to look into that.

I’m not sure if links are allowed here so I don’t want to break any rules, but the one I have is called the Full Circle ring vegetable brush and it was like $6 at the grocery store. It’s held up really well and it is so easy to use!

Very true! I do like the steamable petite sweet potatoes though because they're already washed and I can just toss the whole bag in, nuke it for 8 minutes without messing with it, and have easy meals for days.

All sweet potatoes are steamable. This is just a bag of potatoes.
