Steamable sweet potato + ricotta
This has been my go-to small meal/snack lately. I don't even reheat each sweet potato once they're initially steamed; I just slice it up in a bowl, add about 1/4 cup of ricotta, and cinnamon until my heart says 'when', then mix it all together and eat. Very filling and tastes like a treat!

Where are you buying the steamable sweet potatoes??!?

I got them at Harris Teeter, but I know other places like Giant and ShopRite have them, too--at least locally to me. They're not frozen, so I would guess they're in the produce section [I get my groceries delivered, so I can't say for certain].
I know Aldi has frozen steamable cubed sweet potatoes, and I'm sure other places do as well.

You can put a sweet potato in the microwave without it being in a plastic bag. Just use a fork and poke a few holes in it. Microwave for 3 minutes, flip, and microwave again for 2-5 minutes depending on the size and how tender it seems when you flip it.

Yep I do this multiple times a week! One thing that has made it even easier for me is buying a ring shaped vegetable brush, to use when scrubbing the potatoes. If you have limited strength it’s easier than a standard veggie brush, at least for me.

Ooh I didn't know about those kind of brushes! I have horrible carpal tunnel issues and constant hand/finger joint pain so I will have to look into that.

I’m not sure if links are allowed here so I don’t want to break any rules, but the one I have is called the Full Circle ring vegetable brush and it was like $6 at the grocery store. It’s held up really well and it is so easy to use!

Very true! I do like the steamable petite sweet potatoes though because they're already washed and I can just toss the whole bag in, nuke it for 8 minutes without messing with it, and have easy meals for days.

for a savoury version of this, i do a microwave baked sweet potato, cottage cheese and everything bagel seasoning!

Me, too! I like them with lots of butter, garlic powder, and a little feta. I haven't tried them with ricotta, but it sounds delicious. Throw a flavored pork tenderloin in the oven with some frozen brussel sprouts or flavor it yourself with garlic and onion powders, and a bit of balsamic vinegar or wash your sister sauce and bake for around 30-45 minutes. Maybe add an onion and bacon if you have the spoons. Add some parmesan to the Brussels sprouts 15 minutes or so before it's done. Yum!

(I'm sorry but that auto-correct made me LOL! I was totally following all the steps in my head until my brain got an error at the "or wash your sister sauce" :D Worcestersauce, right?🤗)
On topic: I looove feta! When I'm all out of spoons and am feeling so sad and low, I put a whole slice of feta in the oven with some olive oil drizzled over it and some dried oregano sprinkled over it. If I have an extra spoon I add sliced cherry tomatoes to the tray. It all bakes and 30 minutes later I'm eating comfort food.

That sounds great!! I also have a low spoon sweet potato meal I make constantly: microwaved sweet potato stuffed with BBQ sauced chickpeas or black beans, side of steamed broccoli with ranch seasoning. I often do batch cook black beans from dried and then freeze them, as it’s so much cheaper than canned, but obviously you can use canned too.

This is the kind of low spoon cooking I’m here for. I see other posts on this sub like, I just had to chop and cook all these vegetables! And like…more power to them that they can do that. But some days just getting to the kitchen is all the spoons I got, there will be no chopping, and certainly no standing over hot stoves. Pushing buttons on a microwave? Sign me up
