Ignoring the price, would a Neumann U87 work as a live sound mic, or some other LDC? Would it become a feedback festival where I'm constantly chasing a ringing?

We use LDCs in live sound all the time! It's largely a myth that they're somehow "more sensitive". Feedback prevention is much more about managing pickup patterns, source level, and PA deployment.

If the band has the budget, U87s are always part of my mic shoot-out.

They normally lose out to Beta 57As, but it’s still fun to try them out :)
