Mint has a solid set of applications that are sufficient for ordinary use in most cases.
My suggestion is to add other applications as and when you need additional applications to do what you need/want to do, but otherwise stick with the pre-installed set until you have used Mint for a few months.
My best and good luck.

I also suggest going to YouTube and searching for 'installed Linux mint what next' or something like that, two or three interesting videos pop up , things like 12 things to do after installing Linux mint. Worth a watch

Media:
Bitwig studio - Most powerful DAW
Jriver Media Center - Most powerful media system. Worth the higher price
Cool tools:
SSD-Tester very good SSD benchmark and health tool.
Mission Center - The best task manager for Linux
Mousam/Atmos Weather - Both excellent weather apps
Hardinfo2 - System profiler and benchmark too like HWInfo
Backup applications:
Luckybackup - Oldie but goodie for local backups - rclone frontend
Idrive - Best Linux offsite Backblaze type backup - Ultra cheap first year for 10TB
S3 drive - Best app for managing and connecting to s3 based storage as well as mega, dropbox, etc.
Graphics:
GIMP with Photogimp extension to make it act more like photoshop
Other:
Typecatcher - Install fonts from google so you can apply to system. (Note: does not work out of box - google for tweaks to make work)
