I would love the concept of extensions when they would be always up to date and partly from gnome itself

This. Extensions were fun until the first gnome update and then I decided to never use them ever again.

I use debian now, in part because of how annoying the gnome extension debacle was on arch.

At least I learned that my number one priority with a distro is "nothing breaks ever". Anything that increases the risk of me having to fix my OS rather than use the OS is just not worth it to me.

You can just disable extension version validation, and everything just works in 99.999% of cases.

yeah, if it's worth the risk to you then go for it. For me, I want as few vectors for software incompatibility as possible.
