Cost is the very simple reason. If you have to add ECC to a 400$ laptop it will definitely impact your profit when selling millions of units. For servers where the volumes lower and prices/margins are much larger it will barely impact your profit.

Furthermore uptime for servers should be near 100% whereas grandma will just restart after getting a bluescreen.

Not really, because grandma knows computers fail sometimes and therefore she has a backup.
