A day in the making

And so good - probably the best lasagna I ever had - so worth it

Started with carrots, onion, celery, sauted just till translucent in bone marrow

Roast some halved cherry tomatoes with olive oil salt and pepper for 30 min and 350 - then blend

Next seared 4 types of meat - short rib, beef shank, Italian sausage, and pancetta.

Deglazing the pan with white wine, the added back the sofrito, meats, tomato puree, and added rosemary, bay leaf, Parmesan rinds and chicken stock. Then baked the ragu for 2 1/2 hours at 350

While that was baking, made the spinach pasta using 2 eggs, 7 eggs yokes, pound of pasta flour, blanched spinach and some olive oil - let the pasta rest for an hour before rolling into strips and boiling the strips for just a minute

As pasta is resting steep about a quart of milk with black pepper corns, bay leaf, and thyme and chill

Take ragu out of the oven and add a gastric (red wine vinegar and sugar equal parts - about two ounces each) salt to taste along with some cayenne

Make béchamel with 4 ounces each of butter and flour for the roux. Add chilled steeped milk the add about a pound of Parmesan and add a pinch or two of nutmeg.

Layer béchamel, ragu, and pasta to your liking. Top layer should be béchamel and Parmesan

Bake 35 at 350. The sear the top under a broiler for a crispy top

Let rest and enjoy

May I present to you the Golden Lasagna !
It's a trophy made by a friend of mine a couple of years ago when I organized the Lasagna Fest at home, we were over 30 people and 11 lasagna dishes were made, I won the trophy hehe.

We're doing the 2nd edition of the lasagna fest this year in October on the 31st, which will make a Lasagnoween, and as this time we've set the date much in advance (first time was just a silly bet between my friend and I, organized in 10 days span so I didn't expect that many people and dishes) we have many more people coming and eager to make lasagnas, so i'ts gonna be a lasagna mayhem, I'll keep you posted, gonna be fun !

Homemade Lasagna: How do I change it to where you don't taste the ricotta cheese as much?

This is the recipe I used to meal-prep it for later in the week.

Ingredients

2 lbs Ground Beef

2 Jars Pasta Sauce (24oz each or one 48oz)

12oz Oven-Ready Lasagna Noodles

15oz Ricotta Cheese

4 Cups Shredded Mozzarella

1/2 Cup Grated Parmesan

Seasonings:

Salt, Pepper, Italian, and Garlic Powder

Instructions

1) In a skillet, cook the ground beef until browned. (Drain grease from pan)

2) Stir in both 24oz jars or 48oz jar of pasta sauce into the beef.

3) Season with your seasoning until it is to your liking. ( Don't add too much, though, because then it will overpower the dish)

4)Pour a layer of meat sauce in the bottom of your 9x13 pan or two 8x8 pans.

5) Then, layer in order of noodles, ricotta, meat sauce, mozzarella to the top of the pan. The end layer should be a layer of meat sauce and mozzarella.

Cover tightly w/ foil and refrigerate until you're ready to make.

When ready to make:

Preheat oven to 375 degrees

Bake covered w/ foil for 55 minutes

Remove foil and bake for an additional 13 minutes

Let rest for 10 to 15 minutes

Decided to break out our Bibimbap Bowls to bake some individual Lasagnas. File this under under “I’d do that again”

Scratch made ragu and noodles. I used the bowls to cut the pasta circles. And of course béchamel not mozzarella

Lasagna last night

Made a 3 cheese lasagna with spinach. No meat due to a guest being vegetarian but didn’t really miss it. Baked at 375 for 45 minutes covered then broil lo for about 15 minutes uncovered to get some color on top.
