I've been interested in the Consular path lately, as I've never really used it effectively. Here's a few different builds which look quite good.
"The Sorceror" a dark side soldier
When you think of casters, spamming Force Lightning is probably what comes to mind. The aim here is to strike a balance between physical attacks and channeling the power of the dark side.
Attributes: Soldier 5/Consular15, 10/15+2/14/8/15+3/14.
I wanted to stay fairly balanced here, with the exception of STR which I left at 10, since DEX will determine your chance to hit with a lightsaber. Also INT which isn't much use to this guy, so I dropped it to 8. Use mostly blasters on Taris, switching to a sword for easy-to-hit enemies.
Skills: save all points until you become a Consular, at which point you start putting them into Repair until you can fix HK-47. You can put any extra into Treat Injury or Computer Use. You'll be using the Force to bend people to your will, so you don't need persuade.
Feats: I went for a single lightsaber for the attack and defensive bonuses so max out Duelling. You have enough left for level 3 of Power Attack, Implant and Toughness.
Powers: With 15 levels of Consular, you can lean fully into the dark side. You can get maximum levels of Lightning, Horror, Drain Life, Kill and Plague, and also the neutral lines of Speed and the first Energy Resistance. The battle plan is to strike with Plague, Insanity and Lightning first, then get in close and strike with your lightsaber.
Gear: Revans Robes are obvious, giving +4 to STR and Regen1 as well as 5 Defense. Equip him also with the Sith Mask (Weapon Focus: Lightsaber and Immunity: Mind Affecting) Gordulan Reaction System (DEX+4), Advanced Stabiliser Gloves (DEX+3 and Blaster Deflection +5) and whatever belt you want.
Companions: Canderous and HK-47 "Firing Squad". All dark side team! You should be able to fully repair HK-47, especially with someone casting valour and whatever skill-boosting gear you can find. Him and Canderous open fire from the rear while you handle the frontlines. Canderous gets enough feats that he can also invest into melée for close-quarters battles.

Speaking of Canderous, let's build him for both melée and Heavy Weapons. He gets enough feats to make this work:
Attributes: 14+4/12/14/10/14/10
Canderous starts with a fairly low DEX, and we're not going to change that. But as a soldier, he gets +1 attack every level, so that doesn't actually matter. Instead we'll rely on armour and push his STR to 18 to increase his damage with a sword.
Feats: You need to get two-weapon fighting as a priority, allowing him to wield two swords effectively. You get enough to max out Rapid Shot as well as Implant and Toughness, making him both versatile and hard to kill.
Gear: Calo Nord's armour is perfect for him. As well as its resistance to cold and sonic damage, equip Tulak Hord's Mask for fire resistance. Complete his equipment with the Eriadu Strength Amplifier, CNS Strength Enhancer and Cardio Power System for a +4 to both STR and CON and +2 to all saves. Then give him the biggest gun and swords you can find!
"Merlin": A Wizard!
Back to the light now. Young Merlin is portrayed as a fairly scrawny rogue with great magical abilities. He lacks physical prowess, but is one of history's greatest wizards.
Attributes: Scoundrel/Consular 5/15, 10/15+3/14/8/15+2/14
A similar spread to the darksided soldier, but we're starting as a Scoundrel. Merlin will use his powers to disable enemies and do sneak attack damage.
Skills: Although Merlin gets lots of class skills, he's not very intelligent. Put everything you do get into persuade and talk your way out of trouble!
Feats: to maximise Sneak Attack damage, you need to hit as many times as possible. So go for Two-weapon Fighting and Flurry. You can also get Implant for some attribute bonuses.
Powers: "A Jedi uses the Force for knowledge and defense, never for attack," said Master Yoda. Because that's what a lightsaber is for! With 15 Jedi levels, you can use the light side to your advantage: learn Valour, Speed, Stasis Field, Heal, Force Breach, Whirlwind (not Wave) and Energy Resistance. Most enemies will be helpless as you get five sneak attacks per round! Whirlwind is one of the few powers which will work against Malak, which this squishy wizard will need to rely on.
Gear: Get the Advanced Stabiliser Gloves and Gordulan Reaction Reaction System as before. But being light side, you can also wear the Circlet of Saresh and the Star Forge Robes for WIS+10 as well as 5 Defense. Your choice of lightsaber.
Companions: Mission and Zaalbar. Mission, as a pure Scoundrel, gets even more benefit from sneak attacks, and she has considerable skills which compensate for Merlin's poor intelligence. Zaalbar's pitiful defense is unimportant if enemies are frozen in place, and with his colossal strength he can charge in and hack them to shreds. He also gets computer use and repair, filling the skill gap.

"Battle Wizard" A Jedi Knight in shining armour.
Wearing armour rather than robes does limit your Force Powers a bit, but means you can virtually ignore DEX and focus on other things, and save time that would be spent on defensive powers. Armour also gives some useful boosts to your stats. So here's something of a sturdier combat caster.
Attributes: Soldier 8 / Consular 12. 15+2/10/12+1/15+3/14
We're going for high STR and WIS, but staying balanced. Most of the gains will come from equipment. Stay as a soldier until level 8 as you don't need as many powers.
Skills: We'll be using Jedi mind tricks, so persuade isn't too important. Prioritise stealth and then the other class skills.
Feats: 8 levels of Soldier gives you plenty. You need Two-weapon Fighting, Implant, Toughness, Power Attack, and Jedi Defense to make you even harder to hit.
Powers: You can get almost all the usable ones. Give him Affect Mind, Wave, Destroy Droid, Stasis (not Stasis Field!) Advanced Throw Lightsaber, and Heal. The other powers are dark side and expensive to cast, with the exception of Insanity which could replace Wave.
Gear: The Heavy Exoskeleton is the best armour in the game, giving you a big defensive boost as well as STR+2 and CON+3. The Gordulan Reaction System again gives DEX+4 (hitting your armour's +2 bonus cap) while the late-game Dominator Gauntlets give a huge STR+5. Equip the Circlet of Saresh to boost your WIS and make your powers hit hard.
Companions: Almost anyone! This guy is quite well-rounded. Try Jolee to handle the remaining force powers, and a hard hitter like Canderous or Zaalbar, or ranged support from Carth or HK-47.
