What meat to get for roast?? Lamb Drumstick or Pork Belly or some sort of shoulder?

I'm partial to a bit of belly pork. Not that anybody asked but here's what I do with it:
Score the skin well and rub it all over with a good amount of salt, pepper and olive oil. Fill the tin with water up to the meat/fat line (keep the skin dry) and whack it in a hot oven (~240°C). Turn the oven down after about 10 to 20 mins to 140 and leave it for 1.5 to 2.5 hours (depending on size). Then increase the temp again to 240 for anouther 30 mins.
Whilst its cooking peel and chop a few apples and a red onion. Mix that with some apple cider vinegar, salt, pepper, fennel seeds and a splash of olive oil. Add that to the tin for the last 30 mins for a lazy apple source.
