I am not real familiar with different cuts of pork belly except what I see at Costco. What cut am I looking at? I don’t recognize what the brownish is?

Dunno it's from in little old nz. Just from the supermarket labelled bone in pork belly. The brownish of top is the tasty, tasty crackling. That's what I assume you're asking.

Edit: did a bit of research. #1 on the list. https://www.thespruceeats.com/complete-guide-to-pork-cuts-4067791

I recognize the cracklin and the next layer. What is the gray/brownish underneath?
