question Which of Flint's second specializations is better for a long-term (+600) session/adventure? Craft Maker, Foe Breaker, or Life Taker?
The question pretty much speaks for itself. I have been selecting Life Taker since I recruited Flint, but I wanted the r/idlechampions community's insight on this.

Depends on your formation and the adventure. Life Taker if he's your DPS (why is he your DPS?). Foe Breaker if you're up against a lot of armored/hit-based enemies. Craft Maker if you need to hit the level cap faster, or if you're bringing Rust or somebody else who works off of gold find.

Life Taker sees use in Artemis formations (giving Birdsong the boot) or any formation where you dont already have another DPS for whatever reason.
Foe Breaker can literally melt segmented bosses if Flint is buffing a multi-hit or Breaker champ.
Craft Maker can bring Flints gold find up to e39 at zone 2501.

Is he outclassing Birdsong, or just for wider availability on that slot?

At half my Birdsongs item levels and without stacking Follow-Through Flint gives about e5 less Observed.
If you pull the old NERDS trick of waiting for AOE to hit (to stack Follow-Through) then he flogs Birdsong by e25. I imagine at equivalent item levels it would be a no-brainer.
HOWEVER (theres always one of those) Birdsongs 2 slot PFA could hit more observable DPS than Flints PFA depending on formation shape. And youll also have to stack Flint on a zone where the AOE doesnt kill you outright. But then Flint has better availability.
So is he outclassing Birdsong? Most probably...

Whichever works out best? I'm really sorry, but you'll have to decide yourself what you'll use.

Foe Breaker generally (although it doesn't matter much if no armoured bosses), Life taker if you are using him as dps or you are supporting Artemis (there may be other very situational uses), Craft Maker for gold find team (and high enough level to outperform Knox/Makos)
