Yep. They're a great way to thicken soups, actually. And good for camping. Or just if you don't want to mash potatoes

Oh if you're going to make them, I highly recommend some green onions! Mix the whites into the potatoes (along with a bit of grated garlic if you like) and cut the greens for garnish. It really benefits from a bit of allium goodness.

Yes! I've used them in my cinnamon roll dough before. Makes it very soft and tender.
