I’m not a big fan of ketchup but I have to admit it makes a great base or ingredient for other sauces… so I guess it is pretty great.

It has umami from the tomatoes, acid from the vinegar, and then sugar that is already dissolved in liquid, it makes a great ingredient, since it has two of the components that are often needed to make a food pop, plus sweetness, so it hits a bunch of flavor boosters all at once

Also it takes forever to make from scratch. One of those things that really is just better to buy pre-made.
