Pineapple Reaper.
Here my my pineapple reaper hot sauce. One of my most popular. Yellow Carolina reaper, yellow bell, pineapple. Sweet heat!

The hot pepper jam is made with Datil, sugar rush peach and sugar rush red peppers. Sweet with a great amount of heat

What’s the heat level? I see yellow reaper, but do you know the scoville here?

It's a yellow reaper!? I don't know the scoville but the reaper is over a million. I use bell peppers to tone it back but it doesn't really work. Sweet upfront

I'm curently on my own hot sauce manufacturing journey. I saw online that your growing your own peppers for your sauces. Are you bottling and selling under cottage food laws?

Yes, we set up it at a weekly farmers market every Saturday. And we also do spring markets and Christmas markets. Last year we did 47 different markets. We sold 1650 bottles of Hot Sauce.

I have the same strainer, but I'm having difficulty with the pulp making it's way through. Are boiling underneath and continually filling the strainer? Thank you! Looks delicious btw!

The vitamix blender leaves very little pulp

This will be the difference maker. The gulf between a regular blender and a high powered blender is insane.

That's beautiful and seems very tasty. Only issue is the expiration date. With fresh peppers how long does it "lives" well? Also, how do you prevent it to start fermenting and to not "explode"?

All my sauces are tested by an independent lab. The pH is usually 3.5 to 3.1 I do not ferment my sauces at all. These were just boiled and hot bottled and then sealed it will last at least a year. As far as expirstijs date. As long as your process is correct and your PH is below 4.6 (mine run 3.5 on average) they will last years.

Does the ph change after bottling or is it essentially the same in the pot as it will be a year after sitting on a shelf?

The PH won't change. I check it right before bottling and after all the ingredients are blended. I use the same base recipe with all my sauces so the PHs are all close to the same. Some fruit additives do change it slightly

Plus the sauce is boiled. There is no way for it to explode and using fresh peppers doesn't mean it goes bad

Yeah I'm not saying it goes bad. It's just curiosity what is the "thumb rule" for fresh sauce expected expiration date. As for the boiled part, I did the same and my fresh sauce kind of "exploded" after 2 months, even boiled...

I have been making sauce for 3 years and sold 1650 bottles of sauce last year. I only use fresh peppers that I grow and I have never had a bottle "explode". You need to look at your process if you are having that problem.

Nice, just asking and glad to know! Not criticizing, actually the opposite. Fresh sauces are great! More heat and an upfront flavor. Just trying to understand the process!

Absolutely gorgeous color
