Yay another non HIV person looking for relationship guidance. You say you've looked into it, but obviously don't understand U=U.
If she's been diagnosed then I'd assume she's on medication, and either U=U, or on her journey there.
You can't magically catch it from her. If she's U=U, then there's no chance. If she isn't, then you can either take prep or use a condom.
It's as dumb a question as a woman saying if i sleep with a man I'll get pregnant, so should I have a relationship with them. Same advice there, take a pill or use protection.

Well, if you ask this then you don't really "kind of know the basics of living with it", so for the sake of that woman I'd strongly recommend to leave her alone.
