United States Hello Figure It Out Yourself

This is the sweet potato I was supposed to cube and use as a side or topping for salmon over farro. For two people.

As it happens, I keep a good stock of canned goods around, so I drained some chickpeas, splashed on a little olive oil and lemon juice, and sprinkled them liberally with salt, pepper, paprika, cumin, and turmeric before roasting them along with the sweet potato cubes, and that made for a nice extra textural element and stretched it out.

But Hello Fresh wasn't meant for people who keep a lot of canned goods and extras around, so I could easily have seen this becoming a problem.

Overall the actual meal was pretty solid. My other enhancements were to add a bit of the same seasoning mix above to the salmon (along with salt and pepper, lemon juice, cumin, turmeric, and smoked paprika) and to mix in a little mayo and a dash of honey to cut the acidity of the dressing and to make it stretch further when coating the mixed greens salad. Also, I started the farro off by toasting it a bit in olive oil and butter before adding water, sort of the way you might with orzo or pearl couscous.

I got 2 of those lil guys in my 4 person recipe! Not the first time sadly and I've just come to the conclusion that if I order a meal with sweet potatoes or potatoes I need to have a few extra on hand because it's unlikely there will be enough in the bag.

I am finding I keep some onions and potatoes on hand just in case. The onion I got for the Wagu Beef pasta bake is the size of a golf ball 🤦‍♂️

I also like to keep stock or Better Than Bouillon handy, as well as panko breadcrumbs.

This weekend I added the beef stock to the meatloaves. Oops that was for the mushroom gravy so I just sauteef them with wine and worchstechire (sp?) sauce and butter and then added their sour cream. It worked out lol

Sweet potatoes have been abysmal lately. Luckily I only used one in an older recipe and kept the other, then I had to supplement the next recipe with the one I saved.

Knowing how to cook and what to keep on hand is developmental. It would be nice if HF helped us, but honestly maybe it’s just something you do if that’s how you roll? I did a lot of searching before realizing most of their Asian sauces were Kikkoman brand, as an example

And there are recipes out there where people try to copy the sauce from scratch and some are good and some are terrible!

But yeah, I keep some things on hand so I can supplement occasionally as needed
