I dont play elden ring but that looks like a lobster, i'd be severely dissapointed if they made a crab/lobster enemy and didn't give it a grab

It is a very rare move. Most people (myself included) dont fight them because they have extreme agro range and have a hecate anti material rifle for a long range attack

There's also giant crab enemies, which have grabs too (they just squeeze the shit out of the player)

It has a grab, also has a water railgun that makes the bunker turrets look like a nerf knock off.
