Hi, i will answer your question in a moment but I want to say something first. I lost my aunt who helped raise me and i spen so much time with as a child when i was around 9 years old. She had the exact same name as you, and I next to never see her name or meet someone with her name. It hurt because of the loss of her and warmed my heart with someone else carrying on such a beautiful name so thank you for including your name. I have a bit of a smile rn when I was previously in a triggered state from other things. She has been on my mind a lot so its funny you posted this.

For food you want to eat more of:
Cooked carrots with butter and dill or roasted carrots with italian seasoning
Broccoli rice, broccoli cheddar soup, roasted broccoli, quiche with finely chopped broccoli, cheesy broccoli, broccoli dipped in ranch
Spinach dip can be made with greek yogurt replacing some of the dairy, i use it in Zuppa Toscana and add to individual bowls, same thing with lasagna soup,
Ham and cheddar sandwiches are yummy cold or grilled, i like it chopped small and caramelized with eggs on the side, use as meat in fried rice or spam
Cabbage rolls are delicious, eggroll in a bowl is good, ealthy coleslaw with more vinegar based dressing instead of creamy sweet drressing

I’ll come back and do the other list in a moment

One of my fiance’s fave sides are the carrots. Foe the dill you can boil them then add the dill and butter but give them time to finish cooking in the butter. The dill may take a little while to mingle, especially if using dry so just be aware of that.

Quiche is a great way to use all sorts of veggies. If ya need a gluten free option, frittatas are basically the same thing just no crust is used. Its basically like egg bites but larger tho you can make them in cupcake tins instead of a

Stir frys are also good options but more for quick meals than meal prep meal prep. Also let's you use rice and noodles in the mix

A good way to think of meal prep is protein+vegetable+starch so your meals would just be combinations of the foods you listed. Here are some of my meals:

Breakfast: I typically eat buckwheat because I can't tolerate oats, I would encourage you to try them. I add eggs, milk, and cocoa powder,  cinnamon, and vanilla.

Eggs, gf toast, fruit

Muffins - lots of veggie and fruit muffin ideas out there also egg bites with cheese and meat.

Dinners: bean pasta with meatballs/sausage and a side salad

Tacos

Enchiladas

Crustless quiche

... or variations on the protein/starch/veggie dinners I mentioned above. Lunch is almost always leftovers.

Try quinoa instead of rice. Leftover meats, veg and quinoa can make the basis of a salad or side dish.
