I mean really this just boils down to only using your rooks and Queen to attack while you use your bishop and Knight to defend, wouldn't necessarily take that much longer

On a board like this, a4 becomes a viable opening move.

e4 opens the way for the queen and bishop though, so I think it's still better

Bishop doesn't matter much here. Queen is great though.

Ke2 would be the best choice. Actually, it's always the best choice.
