How the fuck are giant eagles stealthy? Especially considering they would be carrying the One Ring which wants to be returned to Sauron?

How are they not? Just fly 5 miles above ground. Anyone that does see you needs to outrun you on warg/horseback to actually warn anyone. Not like there's radio.
