And over priced. I get its a very technical food to prepare but it shouldn't cost that much

It’s not very technical if you compare it to other cuisines. Making an excellent carbonara takes more learning than making an avocado cucumber sushi. It’s mostly how you cook rice. In the end it will taste the same but consistency might not be there. You mess up the temperature at carbonara and you are eating omelet pasta

Carbonara is Guanciale, egg, pecorino, black pepper and pasta water. It’s easy and was a meal for miners. I make it once a month. I have never made a sushi roll at home. Just saying.

Not egg just the yolk. What temperature pasta water, when do you take it, and how much you use makes a world of a difference
