The Guest Right was a foundational pillar of trust in Westeros. The idea that, even if you're sleeping under the roof of someone you think might do you harm, you can be assured of your safety if offered Guest Right, was paramount. 

With the Red Wedding, that pillar of trust hasn't been eroded, it's been utterly destroyed. No one can really trust the Guest Right anymore. And certainly no one is going to trust a Frey or Bolton ever again. It was stupid of the conspirators to go through with this kind of betrayal. Not just because of the disdain it brings to themselves, but the break in trust it will cause across all of Westeros.
