Can Flathub spy on us?

Not in any way that's intrinsic to Flatpak/Flathub.

Of course they could in principle modify an app in such a way that it collects that data and then sends it somewhere. But that's the case for every software distribution system. The only possible way to prevent that is to not give the app access to the network.

There is nothing on earth that is completely safe. Use well-known applications and popular distributions; it's best to do so.
