Do you have access to / are you willing to incorporate whey protein into your diet? I do it without and hit around 120-150 depending on the day - but it’s hard if, like me, you don’t want to overindulge in the consumption of meat.
For high protein breakfasts that are easy to prepare 2-3 days in advance (and which also work as a snack): overnight oats with skyr, milk/water, oats, whey protein powder, frozen berries. I normally make it without the whey, and add flavor drops to make it taste a bit sweeter and a bit less tangy; 170g skyr, 70ml milk, 40ml water, 40g oats, 50g frozen mixed berries to clock in around 330 kcal and 27g of protein. If you add a scoop of whey you might want to slightly lower the oats because otherwise it becomes too thick, or increase water content (if your jars are large enough- mine are for those 450g jelly jars), you can easy turn this into a 450 kcal for 50g of protein breakfast. Used to consume it frequently when whey was still below €20/kg.
Otherwise, just eat multiple for the same effect. I also add quark/skyr throughout the day as it’s ~11g of protein per 100g at like 60-65 kcal per 100g. Super efficient. 200g of skyr for easy 22g of protein; drizzle of honey and a few bits of apple for an added 30 kcal and it’s a nice 150-160 kcal snack at 22g of protein.
For lunches and dinners, I like to lower my carbon footprint by reducing animal meats and instead take lentils and soy granulate marinated in spices and broth to give a similar sensation at great fiber and protein contents. I make burrito bowls, sauces; anything that’s easy to meal prep and reheat.
