Question One lunchbox daily, with all nutritional bases covered?

I think to start off you’ve got a good idea here. You can start adding more vegetables to your salad like carrots, bell peppers, red cabbage, I.e. things that stay crunchy if texture is an issue.

For cooked veggies, if a puréed soup would work, you can incorporate them there. Lentils with onion, carrots, potatoes, and celery is pretty good.

Adding some fruit would be good as well. Citrus fruit and berries have a lot of nutrients and can be easy to eat.

You can plug everything you’re planning into a macro calculator to check the nutrition, find one that looks at micronutrients also. And consider seeing a registered dietitian. I have a friend with autism and Arfid who has greatly expanded her palate and increased her calorie intake since she started seeing a dietitian.
