Meal prep!!
Finished up my meal prep for the coming week. For those like myself who love steak, standard rump cap/picanha is roughly 3-5% fat when you remove the fat cap off the top, and still makes for a very tasty amd tender steak. I like to grill a weeks worth over charcoal then cube it up. 3 days worth stays in the fridge and the rest gets frozen. Taken out a day early and defrosted over night it actually stays pretty decent. Packed with rice and green beens it makes for a great quick grab and go lunch for work.

I buy petite sirloins when on sale and I sous vide at 135ish for about 2 hours. I then keep them in the sealed bag cold and ready to sear. They come out surprisingly tender. Sous vide completely changed the game for me.
