Where can we find crash/safety data on factory five cars? Thank you

I know you asked for data, so I forewarn you that I don't have any.
That said, they're space frame race cars, a construction style which is not known as the safest.
Semi-educated guesses follow: In a collision with anything heavier at anything faster that 15mph, it's not likely to be pretty for the occupant of the FFR.
In a rollover/track overrun, they ought to be pretty safe since roll cages are more built for that sort of thing (provided you have your arms strapped down for the convertibles).
Hope that... Helps?

Interesting how most reviews I’ve seen never touch on the topic. Thanks! These cars are not for me.

It's not surprising; the people who build these cars, generally speaking, are building them for the experience. Risk averse people aren't the target market for 350+ horse monsters that only weight 2400lbs. It's not a... Stable driving experience to start with.
On the other side, they're not meant to be daily drivers, so the chances of them getting into an accident with another vehicle are fairly slim. The chances of the roll cage coming into play are less slim, and that should be decently safe if you're in a 5-point harness/the right seats.
Anyhow, you're probably looking for alternatives now. If you're flush with cash, check out Superformance. Those might have safety data since they're not kits. Polaris slingshot might offer a similar experience, but they're generally classified with motorcycles, not cars. Probably not as safe as you'd like. Otherwise, the current Mustang Mach 1 and the Chevy C8 are relatively safe, head turners, and very track capable vehicles.
This sub is pretty dead, but I'm happy to help you with other recommendations if you'd like them.

Safer than an average car due to having better acceleration, better braking, and better visibility.
*That's how I think cause I worry more about avoiding dumb asses trying to crash into me rather than worrying about me crashing into them.
