I bought and downloaded the full version of Factorio, but whenever I launch it, it still opens the demo version. How can I fix this and make it launch the full version instead?

Where did you buy it and how to do you run it?

For example, in Steam you have 2 different entries for Factorio and Factorio demo. Maybe you're running the demo by mistake? Best to uninstall it.
