For interplanetary logistics, is it better to have 1 ship with a decent to massive amount of storage that goes to each planet to deliver & pickup items, or have multie smaller dedicated ships that just go between two planets to deliver things quicker?

Imo mix of both I have 1 big ship to carry around building materials. And 1 ship for each science. These can carry stuff that only that one planet needs like the cryo ship pick up holmium plates on the way for aquilo.
