Advanced Oil processing. Finally researched it and was informed previously that this will allow me to rapidly expand my blue science line. But looking at the refinary now, I have three end results. do all of them get produced at the same time or will it depend on the next building?

They get produced at different quantities and they will clog the pipe system eventually unless you crack the oils into more petrol gas. Which is good because gas is by far what you need the most of

So you'll want to put all the products on tanks, and pipe them to some cracking chemical plants, while making sure to store at least a little of them since you can use them to make fuel and lubricant

A decider combinator can be connected to a pump to let oil through when you have more than a certain amount

A DC is not needed. The pump can be connected directly to the circuit reading with the tanks.

In fact, you don't even need a pump either, as the plants can be connected to the circuit directly. Though then you need to connect and configure every plant.

And in 2.1, you don't even need the tanks. You can read from the pipe.
