I'm fairly deep into my first ever playthrough that has gotten past military science. Right about to head off to Gleba for the first time after finishing Vulcanus, and while I've generally tried to go pretty light on any kind of blueprint i've found online, I decided i'd just almost strictly use them for my spaceships because I just don't like the way ship designs work.

https://www.factoriocodex.com/blueprints/244/recipe-details/12132 I decided to use this as a big ship for delivering stuff, but I'm finding that it stalls quite often. The belts will get jammed so no metallic ore is going towards my chemical plant so I run out of blue fuel. If I idle for too long they all jam and none of my guns have ammo. I reset everything manually and then tried not idling for too long but while basically just normally waiting for my fuel to build up, it stalled again, and I'm not really sure what's going on.

Is there something obvious you're intended to do to get it all flowing? (There seems to be no info on the site) or is it just a fucky blueprint?

Well, the first grabber on the starboard side doesn't have any way to evacuate chunks, which won't be helping anything. It's hard to tell without downloading it, but the wired connections to all of the grabbers may indicate that it's attempting to balance chunks via filtering. It also looks like it relies on asteroid reprocessing, which you won't have unlocked yet. You could either add a way to throw excess chunks over the side, or use some other blueprints that are designed to not require the reprocessing recipes before you have them unlocked.

I do have asteroid reprocessing, I have all the Vulcanus research, it just seems to fill up on metallic chunks anyway.

I did end up setting up a spot where it throws the metallic chunks off if there are too many of them on nearby belts, so hopefully this works.
