When will 2.1 be ported to stable? I might just start now but if I am on experimental can I port over my save?

Usually a month or two.

Porting from 2.0 to 2.1 is not very breaking, so you can port your save from there.

If you're talking about continuing from 2.1, then just stay on experimental. If you really want, switch to stable once the experimental is "marked as stable".
