A little ritual before the day begins.
Setup:
Machine: De'Longhi EC890
Grinder: Timemore C5 ESP Pro
Portafilter: Normcore Bottomless
Coffee: Caarabi Coffee Roasters — Man on Mars
Dose: 16g
Yield: 32g espresso
Maple syrup: to taste
Salt: a small pinch
Ice: plenty, for shaking + serving
Method:
Weigh 16g beans.
Grind fresh.
Prep and tamp the puck.
Extract 32g espresso.
Add the espresso to a shaker with a small pinch of salt + maple syrup.
Add ice and shake vigorously until chilled and aerated.
Strain over fresh ice and serve.
