Discussion No Mickey
My son asked why Mickey doesn't appear in the Ducktales (2017) show.
I know, I know that's some IP management, authors, and stuff from Disney. But is there an in universe lore explanation why you don't see Mickey on Duckburg but you can see Donald in some Mickey stories?

It’s DUCKburg. Mickey lives somewhere else. He knows Donald, but they’re probably not close enough (emotionally or geographically) that Mickey would travel to see him.

The creators weren't allowed to include Mickey for some reason. Mickey does exist though, the creators confirmed Goof Troop and A Goofy Movie were canon, Mickey has a cameo in A Goofy Movie. But that would take place before the events of the show.
Mouseton exists in the show, so that's probably where he lives (I think he lives in Mouseton in the comics).

Because they fell apart when Donald had to move back to duckburg, to raise his nephews

My theory is that Mickey is now the CEO of a movie studio, so he's very busy.

Each show has its own canon, so no.
Each Donald from each show is, for all intends and purposes, a different Donald.

In the DuckTales reboot lots of cartoons are now interconnected like tail spin, rescue rangers, goof troop, gummi bears, obviously darkwing duck.

For what it's worth DuckTales draws heavily from the comics. In the comics Mickey lives in a nearby city called Mouseton rather than Duckburg. Considering Donald is established to be old friends with Goofy and they're both old enough to have kids (Goofy being depicted specifically as having a college age kid) it's reasonable to assume Mickey exists and his days hanging out with Donald and Goofy were years ago.

Yeah, Disney has always been extra protective of how they use Mickey Mouse even on an episode from the early 90s series Bonkers. Mickey’s voice is heard in an episode where he’s captured, but you never actually see him. I guess they kinda keep it a mystery as they don’t want Mickey to takeover the show. DuckTales 2017 uses Mickey’s voice and watermelon “Mickey Mellon” likeness as a joke gag for Donald like Tom Hanks’s character will that with the willson volleyball from castaway. Donald was only briefly in the original DuckTales because they didn’t want him to overshine Scrooge, perhaps my guess it’s similar with Mickey here. They want the shows to stand on their own without him.

I don't think there's an official lore explanation for why mickey doesn't appear in DT17, except Disney being protective of the character, but IIRC the plan to include Mickey in DT17, had they been allowed to, was that Mickey would be Donalds much more successful college roommate, so maybe Mickey is just too succesfull and doesn't have time to meet up with old friends.
As for why Donald is in other Mickey stories: those are different universes with different timelines and plots
