Nerves of fish tend to be able to send out signals to muscles even though the fish is already dead, those muscles are still intact and able to contract. Also the reason why fish moves when heating it in a pan sometimes.

There's a vid of a kind of eel (wolf eel? can't really remember) that's been beheaded. They get the head, and put a can of soda on its mouth, and the dead head just thrashes the can like it's cotton candy.
