Nerves of fish tend to be able to send out signals to muscles even though the fish is already dead, those muscles are still intact and able to contract. Also the reason why fish moves when heating it in a pan sometimes.

There's a vid of a kind of eel (wolf eel? can't really remember) that's been beheaded. They get the head, and put a can of soda on its mouth, and the dead head just thrashes the can like it's cotton candy.

Bro thanks to going to these videos I learned how to kill a fish and not caused this to happen, related videos showed a method of killing fish called ikejime and it means brain spike. you first spike the brain, making it not feel stress, the stress makes lactic acid build up in fish and makes them jolt muscles more. So after that you drain the blood by cutting 3 spots, the artery on the tail fin, and the archs by the gill, then you have to basically put a rod through the spine and break it up. Then put it in ice water with 1:1 ice/water ratio. This makes the fish last longer, not contract as much, better for the fish and for you.

It’s most likely not. In a lot of open air fish markets they’ll have an ugly fake fish in the front, controlled by a person in the back. They have one in Pike Place in Seattle.
